DELICIOUS PASTRY: Fatayer

FATAYER is a delicious pastry that hails from Lebanon. These easy to cook spinach pies are perfect finger food appetisers and they taste great. Serves 6.

INGREDIENTS

FOR THE CRUST:
21/4 teaspoons yeast
300ml lukewarm water
100ml olive oil
1 teaspoon salt
300g wholewheat flour

FOR THE FILLING:
1 small packet frozen chopped spinach, defrosted and drained
200g finely chopped onions
2 cloves of garlic, crushed
100g pine nuts
Juice of 1 lemon
1 tablespoon dried marjoram
70ml olive oil

METHOD

1 Preheat oven to 220C/200C fan/gas 7.

Dissolve the yeast in the water. Add the olive oil, salt and the wholewheat flour and mix until you have dough that you can knead.

Knead for a few minutes on a lightly floured work surface, just until shiny and elastic.

2 Place the dough in a large oiled bowl, cover with a towel and let it rise until it doubles in bulk. This will take about 1 hour.

3 Blend together all the ingredients for the filling and set aside.

4 Turn the dough out on the work surface and knead for a couple of minutes. With a rolling pin, roll the dough out very thin, but not so thin that it will break. Cut 4in squares with a pastry wheel, place a heaped teaspoon of filling on each square and fold into a triangle. Pinch the edges together and place on a lightly oiled baking sheet.

5 Brush with a little olive oil and bake in the oven for 20-30 minutes or until light brown. Cool on a rack or serve hot.
