Raw veg boats with yogurt dressing
This is a great healthy snack and perfect as a canape for a summer party.
INGREDIENTS:
100g celery
2 chicories
200g natural yogurt
100g sour cream
Squeeze of lemon juice
2 tablespoons honey
Salt
Pepper
1 pot of fresh chives
300g apples
300g carrots
200g beetroot
METHOD:
1) Wash the celery and cut into thin slices.
2) Take 16 large leafs of chicory, wash and leave to drip off. Cut the rest of the chicory into thin strips.
3) Place the yogurt in a bowl and stir in the sour cream, lemon juice, honey, salt and pepper. Slice the chives into thin rings and stir into the dressing.
4) Wash and quarter the apples, then de-core them.
5) Peel the carrots and beetroot. Grate the apples, carrots and beetroot.
6) Equally fiLl the chicory leaves with the grated apples and vegetables.
7) Sprinkle with the celery slices and shredded chicory.
8) Pour the dressing over the top of each little ‘boat’ and serve straight away.
